Cuvée from mostly Pinot Gris with a pinch of Pinot Noir, both grown on slate. The name is a nickname for this group of vineyards. All handpicked, tiny berries that were fermented whole bunch / semi-carbonique for a week. The berries really taste amazing during this fermentation, like delicious bubbly-fruit-bombs full of tension. They got gently pressed and finished fermentation in used oak barrels. It was sitting on the full lees until april and was bottled unfiltered and unfined. Nothing added, nothing removed.
